Feature: Blueberry Habanero
Appetizer:
Fireside Chat-petizers
Smoked sea salt, black caramel pralines, and bacon are perfect for deep thoughts by the fire
Yield: 2 servings (8 bite-sized appetizers)
Ingredients

- 2 strips of bacon
- 8 crackers (see notes below)
- 1/4 cup blue cheese or blue cheese crumbles
- 8 Black Caramel Pralines
Garnish
- 1/4 blueberry habanero half
- 1/4 teaspoon smoked sea salt
Directions
- Cut each strip of bacon into 4 pieces
- Cook bacon in a pan on the stove until the internal temperature reaches 165°F
- Crush the blueberry habanero and mix with the salt
- Melt blue cheese in a microwave-safe bowl
- Put one Black Caramel Praline on each cracker
- Deal one piece of bacon on top of each Black Caramel Praline
- Spread the melted blue cheese on each piece of bacon
- Garnish with blueberry habanero/salt mixture
Notes
Pretty much any cracker without an overwhelming amount of added flavor will work just fine: saltines, water crackers, plain triscuits, and even little toasts are all great choices! The cracker is just a vessel for deliciousness!
If you’re an experienced bacon cook, you probably just use a visual cue for deciding when bacon is fully cooked. We like to encourage meat thermometers regardless of your experience because 1). It isn’t a super awesome idea to play fast and loose with brain worms (trichinosis) and 2). You risk overcooking the yumminess out of things!
